Keith & Xue Wei’s AD Morning Buffet Reception – Wedding Caterer (Chilli Manis Catering)

June 24, 2019

The past few months have been a whirlwind of emotions with wedding planning – from choosing the venue, sorting the programme for the day, settling all the miscellaneous activities and of course, the food! If you’re looking for a sumptuous spread of delicious and appetizing food for your celebrations, here are some things to take note on before you embark on your wedding caterer search!

  • Decide on your budget early on
  • Signature dishes or more gimmicky items
  • Consider guests’ dining requirements/preferences
  • Type of cuisine, format and fit for your celebration

While searching, you’ll definitely come across plenty of food caterers online. For us, we chose Chilli Manis Catering to be part of our special day because we love their food so much – check out our past review here. We found that they were suitable to meet our needs for our morning gatecrash/tea ceremony because of the options they offer – from a full range of set buffets and bento packages that range from $10-$20 per pax (depending on selections).

Look at that beautiful set up! Complete table layout with skirting, warmers and full set of disposable cutleries included

Helmed by Madam Serene Hoh, Chilli Manis, which means “Sweet Chilli” in Bahasa Indonesian, seeks to showcase the best of Peranakan cuisine’s dishes that have amalgamated signature flavours across Chinese, Malay and Indonesian fares. Perfecting the timeless creations and recipes, their authentic Peranakan dishes are prepared with a delightful usage of herbs, spices and aromas to enhance its flavours – creating heartwarming dishes that are perfect for gatherings. As we wanted to ‘wow’ our guests with a delectable array of Peranakan fare, we had to go with the very best – both in the signature flavours and presentation of dishes.

We ordered the Classic Mini Buffet A which comes with 8 courses, suitable for 20 pax. You can choose from a variety of dishes for each course, some of the highlights on our menu include:

  • Fragrant Thai Pineapple Rice
  • Signature Ayam Buah Keluak
  • Baked Fish with Mango Sauce
  • Udang Masak Nenas
  • Nonya Chap Chye Mushroom
  • Nonya Sayur Lodeh
  • Steamed Chicken Siew Mai
  • Crispy Curry Samosa
  • Fresh Fruit Platter
  • Assorted Nonya Kueh
  • Kueh Pie Tee

Below are some of our favourites and must-order for your celebration!

1) Signature Ayam Buah Keluak & Udang Masak Nenas

A Peranakan fare is not complete without ayam buah keluak. Made with chicken and buah keluak nuts, it’s braised in a thick, spicy tamarind gravy which is perfect to have on its own or with rice. The buah keluak filling can be easily taken out and you can really sense the fragrance and blend of spices in this dish. The Udang Masak Nenas is also a worthy contender – generous serving of fresh succulent prawns in spicy, tangy flavours.

2) Baked Fish with Mango Sauce

These tender fish fillets are jazzed up with a variety of spices and an irresistible mango sauce. It’s light and refreshing and we really like how lean and firm the fish slices are!

3) Nonya Sayur Lodeh

A potful of yummy ingredients, the sayur lodeh at Chilli Manis is not too overwhelming and heavy unlike others out there. We personally prefer how it’s quite light and just mildly spicy – suitable for both adults and children. The mixed vegetable dish comes with an abundance of ingredients and essentials like beans, carrots, cabbage, fried tofu and more.

4) Fragrant Thai Pineapple Rice

A simple yet crowd-favourite dish, the pineapple fried rice has a pretty authentic taste albeit its plain-looking presentation. Just looking at the picture has our cravings up again. Topped with chicken floss to balance out the sweet and savoury flavours of the pineapple, it’s a dish that everyone can enjoy.

5) Kueh Pie Tee

A must-have Peranakan appetizer, the Kueh Pie Tee is one of our favourites on the table. Thankfully amidst our busy schedule on the wedding day, we had the chance to grab some of these delicious pai tee cups, topped with fresh vegetables, prawns, egg and chilli.

6) Assorted Nonya Kueh

There’s no denying these eye-catching treats like the rainbow steamed lapis coupled with the fragrance of pandan, grated coconut and glutinous rice!

Besides the full-buffet set up, we also arranged Bento sets for our wedding party, photographers, videographers and all the helping-hands for the day! We decided to go with these bento sets mainly because most of the wedding party were on the move so it was a fuss-free option to eat on-the-go. Prepared in disposable microwaveable containers, you can choose from a few bento sets including the Signature Bento, Malay Bento, International Bento, Premium Snack Box and Peranakan Bento Set.

Overall, the wide variety of formats like full-set up, mini buffets or bento sets capturing the essence of timeless Peranakan flavours is a great option for those looking to cater for large or small gatherings. Whether you’re looking for a simple catering service for your morning tea ceremony reception or off-site wedding banquet, Chilli Manis has got you covered.
